Penne of pea flour in a green salad

Ingredients

For 2 people

120gr of Penne di Montemonaco 100% organic pea flour

green salad

chicory

armesan cheese aged 36 months in chunks

salt, extra virgin olive oil to taste

Process

SALAD version of pea flour penne

Put a large saucepan with water on the fire, salt to taste and bring it to a boil. When the water boils, pour the pens and cook for 6/7 minutes, taking care not to mix them in the first minutes of cooking. Once cooked, let the pens cool down.

Wash and dry the salad and radicchio. Put the pea penne, the salad and the radicchio, the parmesan cheese in a bowl. Season with the extra virgin olive oil, salt and serve.
