Rigatoni of Lentil flour in red salad
For 2 people
120gr of Rigatoni Monte Monaco 100% organic lentil flour
salt, extra virgin olive oil to taste
Lentil flour rigatoni in a SALAD version
Put a large pot of water on the fire, salt to taste and bring it to the boil.
When the water boils, pour the rigatoni and cook for 6/7 minutes, taking care not to mix them in the first minutes of cooking.
Once cooked, leave the rigatoni to cool.
Wash and dry the radicchio.
Put the rigatoni, the radicchio, the sliced cherry tomatoes and the walnuts in a bowl.
Season with extra virgin olive oil, salt and serve.
